This Italian recipe for chicken soup is an excellent winter dish that will have everyone asking for seconds. It's simple to make and can be stored and reheated for a quick, tasty meal. It also tastes great without the chicken, as in the picture below:
Ingredients: 6 chicken wings, thighs, legs or breast strips 6 cups water 1 bunch celery 1 onion 1 cup rice
Cheese Dumplings: 1 cup grated cheese 1 ½ cups breadcrumbs 2-3 eggs Parsley Mix to a soft but firm consistency.
Boil water. Add chicken, celery and rice. Cook for 20 minutes. Add cheese dumplings and cook another 10-20 minutes. Season with finely chopped parsley.
