Italian Recipe: Italian "S" Biscuits

My grandmother called these biscuits "cose dusce", which I believe is a Sicilian translation
of "cose dolci" or sweet things. There are many recipes for the biscuits but this one allows them to
remain soft and moist for a long time in storage.
You can shape these biscuits like the letter S, but for this recipe I make them oblong. They taste great either
way!
Ingredients:
5 eggs
1 cup caster sugar
1 cup oil (sunflower, maize or light olive)
3 cups self-raising flour and a pinch of carb soda
(OR 3 cups plain flour and 3 tsp baking powder)
grated rind (orange or lemon)
Dipping Mix:
1 cup self-raising flour
1/2 cup caster sugar
(Mix in bowl and set aside)
1. Sift the flour and carb soda together.
2. Beat eggs and sugar until glossy.
3. Add grated rind and oil and mix.
4. Add dry ingredients and mix.
5. Line oven tray with baking paper.
6. Drop 1 tablespoon of mixture into Dipping Mix and coat lightly. Place on tray.
Repeat until all mixture is used and tray is full.
7. Cook at 160-180 degrees C for 12 minutes or until biscuits are a light golden color.
(You'll notice there are only 2 biscuits in the photo. My family almost devoured the entire batch before I had
a chance to grab the camera!)
